Baked Cheese Cup Cake with Starwberry Sauce

For strawberry sauce:
·        Fresh strawberry-8 -10 no.
·        Salt-1 pinch
·        Red fresh chili-1 no.
·        Sugar- 1/2 cup
·        Water-2 tbsp.
·        Lemon juice-1 tsp.

For cake batter:
·        Cream cheese-165 grams
·        Whipped cream-50 grams
·        Egg( separate egg white and yolk)-2 no
·        Vanilla essence-1 tsp.
·        Sugar powder-25 grams

For base:
·        Oreo biscuit dust - 5 nos.
·        Melted butter -20 grams.

for making sauce:
·        Blend fresh strawberry and make a fine paste.

·        Take a Preheat pan; add sugar and water in it, when sugar melts add fresh strawberry paste and let it boil for 4-5 mins.

·        Now add chopped fresh chili and pinch of salt and let it boil for another 5-6 the mean time add lemon juice and mix well.
·        After it thickens remove from heat and keep aside.

for cake batter.
·        Beat egg white until it becomes stiff peaks. Keep aside.

·        In a mixing bowl first take ready made/ homemade cream cheese and sugar together, beat until it becomes fluffy, then add egg yolks one by one and vanilla essence beat well.

·        Then add flour mixture, whipped cream (beated) and beat altogether.
·        Finally add egg whites and beat well.
·        Finally add egg whites and vanilla essence and beat well.

·        So the cake batter is ready.

for base.
·        Mix melted butter and Oreo dust. Keep aside.

for cupcakes.
·        Take cupcake mould and line in with cupcake papers,
·        Now make thin base using Oreo-butter mix (use your fingers to make the base stable) and pour cup cake batter over each one by one.
·        Finally pour one tea spoon of strawberry sauce over each cup cake batter.
·        Using a spoon make a semi-marble effect of the cake.

·        Preheat the oven at160 deg c .now take a round shaped container with half full of water; keep it inside the preheated oven.
·        Now position the lower rack over the container and place unbaked cupcakes one by one.(picture showing)
·        Bake it for around 45 mins, tooth pick test is recommended in between.

·         Remove freshly baked cupcakes and cool it down and is ready to make your day good.

Caramelised Fresh Fruit Cake

           Sometime I think of a recipe and gathered ingredients for that, but somehow I always been change my mind by another. This leads to unused ingredients rest in my refrigerator and waits to be cooked. Today when I opened my freeze, I saw there are some fruits Apple, Banana and Cherry. They were still fresh. Quickly I thought for making something baked item using them .So that’s born this yummy Fresh Fruit Cake.
          Whenever I prepare cake for my family I prefer Friday to make it as they can enjoy a relaxed morning with cake and a cup of hot tea.
      I thought drizzle it with chocolate glaze, but it was so soft and wonderful in taste that I gave up my glazing idea. I always feel very happy to make my family happy. So try this if you are not done this before. Waiting for your comment and liking.


·        Flour – 1 ½ cup.
·        Baking powder-1 tsp.
·        Baking Soda – ½ tsp.
·        Eggs-2 no.
·        Sugar – 1 cup.
·        Demerara / Brown Sugar – 3 tbsp.
·        Butter milk – ¼ cup.
·        Vanilla essence – ½ tsp.
·        Egg – 2 no.
·        Apple (chopped small cube) -1 no.
·        Date (Chopped) – 8 – 10pcs.
·        Banana (chopped) – 1no.
·        Cherry (chopped) – 8 – 10 pcs.
·        Cashew nuts (chopped) - 8 – 10 pcs.
·        Raisin -8 – 10 pcs.
·        Lemon jest – little bit.
·        Lemon juice – 1 tsp.
·        Walnut - 8 – 10 pieces.
·        Butter – 75 grams.
·        Olive oil – 1/8 cup.

·        Take a mixing bowl and sieve flour, baking soda and powder together, keep aside.
·        In another container take all chopped fresh fruits, lemon zest, lemon juice and mix well, keep aside.

·        Take another dry pan and heat it, put white sugar and wait till it melts .
·        When sugar melts add butter milk into it and mix well, next add chopped fresh fruit and mix well.
·        Cook it for 3 to 4 mins. Remove from heat and cool it in room temp.
·        Now in a mixing bowl beat brown sugar, butter and olive oil beat it till it become bit fluffy. Add eggs one by one and beat.

·        Next add prepared caramelised sauce into it and mix it with a spatula or wooden spoon.
·        Fold flour mixture and dry fruits with it.
·        The final batter is ready. Preheat the oven at 190 degree centigrade and bake for 40 minutes or until it is baked fully. (Check with a tooth peak, if it comes out clean, then it is ready).
·        Let it be cool down. It is ready and enjoy it with tea.

Apple Pie

             It was few days before when I tasted a combination of mild hot Apple Pie and Chilled nutty ice-cream in a party. It was so fantastic that I decided to try Apple Pie at home. It was far ahead in comparison of French loaf and similar outlets and it may be because of the freshness. I tried and the result came out nice at the very first time. Now a days my little also commenting honestly like her father and it was “nice” in her words.
     Apple pie is a fruit pie in which the principal filling ingredient is apple and the pastry is generally used at top and bottom and finally it has to bake within a mould. The ingredients for the base or pastry are quite similar to that of tarts. I used white sugar and moderate quantity of brown sugar with apple but it’s up to you how you make your fillings. I made the sauce with caramelised sugar and butter (you can use bit of water, I used caramelised sugar as I like its aroma). So make your own Apple pie at home and enjoy it with you family and friends.  


For dough:
·        Plain flour-140 grams.
·        Butter-75 grams.
·        Chilled water-as required

For Apple sauce:
·        Chopped apple-2 medium sizes
·        Lemon juice-1 tsp.
·        Lemon jest of one lemon
·        Sugar-1/2 cup
·        Butter-42-45 grams.
·        Cinnamon powder-1 pinch
·        Crashed Clove -2 no.
·        Cashew Nuts (chopped) – 1 tbsp.
·        Walnut (chopped) –1 tbsp.
·        Brown Sugar – for sprinkling.

·        Mix lemon juice in chopped apple to protect its fresh colour.
·        For caramelised sugar take a pan. Heat it. Put sugar into it. Sugar starts to melt by edge first. Don’t move the pan at first.
·        When sugar completely melted, add butter in it. Mix with a spatula.
·        Next add apple chopped spices (cinnamon and crashed clove) and lemon zest.
·        Mix it and let it boil for 10 minutes.
·        Remove from heat and add dry fruits ,finally cool till it come in room temperature.

·        Now for dough take butter and flour in a bowl and mix well up to it looks like bread crumbs.

·        Now add chilled water as required and make a soft dough, cover it with cling film and keep into refrigerator for 15 min to 30 mins.   

·        Place it into tart mold and press it into mold with your thumb. Cut out the portion dangling outside the mold.
·        Put prepared apple sauce into it.
·        Cover it with the neatly cut off dough after flattening it with any style or as shown in the picture.

·        Finally sprinkle brown sugar over it for a nice look.

·        Preheat oven at 200 degree C and bake at 180 degree C for 20-25 minutes or till it become golden brown.

·        Pull out freshly baked Apple Pie and de-mould it after some time.

·       Yes,it is ready to serve hot or cold,best combination is with ice-cream(personal view)

·         If you put butter and sugar together butter will melt too quickly and sugar will take time. So it’s better to caramelise sugar first and then adds butter.
·         Using brown sugar the colour of the fillings gets dark if you don’t want dark colour use only white sugar.
·         You can use saffron to make its colour sweet light red, I personally like it.

Rabri --Bengali Version

            Today I am posting a very well-known desert recipe Rabri .I made this especially for Bengali New Year for the ongoing KFB event “Poila Boisakh Special week”. When it comes to celebrate a festival there comes deserts and we Bengalis popularly called as “Naba Barse Misthi Mukh” means starting the year with sweets makes the whole year remains sweet.It is equally popular dish along with  Malpoa, Payesh, Rasogolla ,Coconut Barfi , Rosomalai ,Mewa Barfi , Kheer etc. This easy and tasty desert is made using milk and a very few ingredients.In addition, I used condensed milk to make it tastier though it is optional. Basically it is thickened milk having layers of cream in it. Preparing rabri is easy but you have to give it attention. There is no short cut method to this traditional recipe, remember not to get absent minded while making rabri because a slide burn of milk will make its taste worse. So keep on your eyes while preparing and enjoy the desert with your family...  


·        Milk-1 ltr.
·        Condensed milk-3 tbsp.
·        Sugar-heaped - 2 tbsp.
·        Cardamom powder 2 no
·        Almond chopped-for garnishing

·        Saffron - for garnishing.

·        Heat a kadai or broad mouthed pan. Pour milk for boiling.

·        Milk starts to boil, low down the heat and let it be boiled. Don’t stir it.

·        When cream of milk is appeared on top of the milk, just gently shift it towards the rim by a spoon.
·        Let the milk for boil and do the same process when next cream of milk will appear on top.

·        When milk is become thick and become almost half or bit more, add condensed milk and sugar. Mix it well.
·        Boil further for 1 minute and finally remove from heat.
·        Put it in a serving plate and it is almost ready just need to do some garnishing.

·        Garnish with some chopped almond or bit chopped pista.
·        Cool it down and the easy and delicious “Rabri” is ready to serve.
